Crème Custard Bars with Vanilla Poached Pears

I made these crème custard bars with vanilla poached pears Friday afternoon during one of my weekend tornadoes in the kitchen. Egg shells were carelessly thrown into a lonely mixing bowl as I shrugged my shoulders and thought eh, let’s make this last one a whole egg, just for kicks. Five egg yolks and one whole egg is not some precise equation I’d plotted out the night before. In fact, I have no idea how these bars turned out to be so completely elegant with the most velvety custard and pure cream taste. I threw caution to the wind, adding a bit of cornstarch to hopefully ensure sturdiness when the bars were cut, and buttermilk to keep things interesting. I believe the result is the ultimate franken dessert. They’re like creme brûlée and chess pie but better than either of these. Now I’m getting cocky, and we haven’t even gotten to the pears…
