Overnight Deep Dish Pizza

I meant to share this pizza about a million years ago, but I think just in time for the weekend is as good a time as any. Here’s what I especially love about this baby–you can let the dough rise overnight in the fridge. Something about knowing that a dough is rising in the fridge, waiting for me to use it whenever the mood should strike, really brings me joy. It just makes everything sound easier.ย So, let’s all throw some dough in the fridge and eat this super duper delicious, maximally cheesy overnight deep dish pizza tomorrow!

Instant Pot Red Chili Chicken and Pinto Bean Burritos with Pico de Gallo

I was recently gifted an Instant Pot and it has opened up a whole new world of last minute dinner possibilities. You want shreddable chicken but you’re starving and in a hurry to watch This Is Us? Oh yeah, no problem! The Instant Pot is so user friendly that I took a mere cursory glance at the user manual and have the thing mastered (knock on wood… so far, so good!). And the best part, for an organization obsessed minimalist fiend like myself is that it’s a slow cooker, rice cooker, and pressure cooker all in one! It also sautรฉs, though I’ve yet to explore that option. These Instant Pot burritos feature two components made possible using this fine machine–shredded red chili chicken and rice and mashed pinto beans.

Baked Sweet Potato with Sausage, Crispy Kale and Roasted Garlic Sour Cream

I conceived the idea for this little baked sweet potato beauty a week ago, but I was so disheartened when I read this Bon Appetit articleย and discovered that sweet potatoes are on the list of food trends to end in 2017. Are we really done with sweet potatoes?! Also, sunchokes? I just discovered that those were a food! How could they have risen to such trendy heights and subsequently fallen out of trend just as I was flirting with the idea of eating one?! And now that I think of it, this dish also features kale, the food darling of 2015… I am so off trend. You now what’s not off trend? A dinner that’s easy, composed of real food, crave worthy and healthy-ish.

Super Simple Pasilla Chicken Enchiladas

Sometimes I feel like the internet/the world moves at a neck breaking pace. I’m still over here in Oregon, dead of winter, thinking about how to stay in pajamas longer and never stop baking cookies. Meanwhile, the internet has moved on to greens and detoxes. I’m sorry, but I’m just not ready for that. Do you think bears stop hibernating because Christmas season is over? Nope, and this bear ain’t about to either. What I’m really interested in is how I can make a big batch of super simple pasilla chicken enchiladas, freeze half, and eat half now. And bonus, let’s make an even easier Mexican restaurant style rice in a rice cooker.
